Homemade Pesto

One night, my family was making sandwiches, and were planning to use basil pesto in it. According to my dad, we had a full jar of pesto sitting in the fridge. But when we opened the jar, (drumroll please) we found that there was less then a spoonful left. Prior to this night I had been browsing through the Food Network site, and had stumbled across a pesto recipe. We had pretty much everything we needed, substituting a few things here and there. I stuck everything in the blender, and crossed my fingers that it wouldn't turn out that bad. That was when my first (of soon to be many) batch of pesto was created.


Now this story took place about 6-7 months ago, and over the months, I have gotten a little better at it (I hope...) and I don't really rely on the crossing of my fingers anymore. ;)


Pesto is actually very useful (and delicious) and it is definitely a staple in our house. It is also relatively easy to whip up in no time. Another really great thing about it, is that it is very versatile, and there are different ways to make, and change it depending on what someone likes or dislikes.


Pesto is also something that can be eaten in many different ways. Cook some pasta, and toss it in some pesto, and consider dinner done for the night. Slather it on some bread, and use it in a sandwich. And if you are feeling really adventurous, instead of pizza sauce as a base, use pesto in homemade pizza. However, one of my personal favorite ways to eat it is to make a tomato and basil bruschetta. Here is the recipe:


1 slice of sourdough bread, halved and toasted
1 tablespoon of pesto
1/2 of a tomato, diced
Freshly squeezed lime juice
1 sprig of basil
Salt and pepper, to taste

Take sourdough bread and spread pesto on it.
Arrange the diced tomato so that it fits nicely on to the bread.
Squeeze lime, and sprinkle on salt and freshly ground black pepper.
Garnish with a sprig of basil.

Servings: 1


Cooking in general is one of my hobbies, and it is definitely something I am very passionate about. Pesto is just one of the many things I like to make, and I look forward to sharing more things with you as well. I hope I encouraged you to try a new thing, or maybe a new way to eat it.
